Kishmira Posted November 12, 2015 Report Share Posted November 12, 2015 (edited) Ingredients - Durban Mutton Curry Recipe500g mutton(bite size pieces)100ml oil1 bay leaf3 small cinnamon sticks1tsp fennel seeds1 large onion chopped(at this point you can also add a few green chillies slit through the middle for some heat)1 sprig curry leave2 tsp ginger & garlic paste2tsp salt¼ tsp turmeric4 tbl masala6 even sized potatoes3 sprig fresh coriander (chopped dhania)1 medium tomatoUse water if desiredInstructions - Durban Mutton Curry Recipe1. Heat oil and then add onion, turmeric & spices to fry for a few seconds (allow onion to soften)2. Add masala, ginger & garlic allow to cook for a few seconds (do not burn masala)3. Add tomato (when almost cooked stir in meat and allow to sauté)4. Turn down heat and cover saucepan5. Cook until meat begins to fry up6. Add the curry leaves and salt7. Add the water (if necessary) and potatoes8. Bring to a boil, then turn down to moderate heat9. Cook until meat is tender & potatoes are soft10. Simmer until ready to serve11. Garnish with dhaniaServe with rice or roti...or be adventurous and make your own bunny.Btw I forgot to mention that a good masala(mixed spices) to use for most curries is the Bombay Delite brand.Ask for it at the spice shop.Enjoy... However if you do decide to use mutton which is tougher, I suggest ensuring that the meat is at least half way done before throwing in the potatoes.Glad to share and bring back memories.Do enjoy.Glad to share. The Indian owner would know the young blokes had ravenous appetites. He made both 1/4, 1/2 and FULL bunnies. If I remember it was R4 for a full bunny. He made it so hot you sobered up in no time. But bloody hell he could make a bunny worth dying for. I miss that fellow. And his legendary bunnies.One other place that made killer bunnies was in my little home town of Mtuba, at the railroad station was a seedy cafe run by an Indian mate of mines dad. Oh man, he also introduced me to curry powder coated wedgies, and chilli powder coated pineapples. This guys bunnies (Leon was the sons name) were so good, I would hammer at least 2 at a time.
