SMAAKLIKE MELK TERTPastry:2 cup flour½ cup sugar125g (4oz) margarine or butter1 eggsalt2 teaspoons baking powderMethod:Cream margarine and sugar. Add egg, flour, baking powder and salt. Mix well. Press into 2 pie plates. Bake for 10 minutes. (The crust will rise as it bakes, so I usually squash it down, or put dried beans in to keep it down - whichever works for you.)Filling:4 cups milk (I use half and half or full cream)2 ½ Tablespoons flour1 cup sugarvanilla essence1 Tablespoon margarine (I prefer butter)2 ½ Tablespoons corn flour2 eggsCinnamon for sprinkling on topMethod:Boil milk and margarine or butter. Mix rest of ingredients to a smooth paste. Add slowly to boiling milk, which has been removed from heat. Return to heat, and stir until thick. Pour into shells and sprinkle with cinnamon.Note: I usually make it the day before and keep in the 'fridge overnight - it sets nicely that way. Also, I use Tenderflake deep dish pie pastry (I guess there must be something similar in Australia - look for a flaky pastry), rather than make my own pastry, but the one that comes with the recipe isn't too bad.
