Chocolate cake to go with the mousse

Cindylou asked for a chocolate cake recipe to go with the mousse.

I used to bake this cake in South Africa all the time and have never had it come out anything other than a success. The batter is generally enough for two round cake pans. However, the newer springform pans are bigger than the older pans. I could only fill one pan this time around and then sliced the cake in two to make a layer cake.

This is an old family reicpe.... It still calls for a half teaspoon cochineal to be added to the batter.... something you can't buy anymore!

Sift together:

1 and 3/4 cup cake flour

1 and 1/2 cup sugar

pinch of salt

1 and 3/4 teaspoon baking powder ( I added an extra half teaspoon on Saturday)

1/2 teaspoon bicarbonate of soda


1/2 cup melted butter

1 cup milk

1 teaspoon vanilla

Stir VERY well


2 eggs

2 tablespoons cocoa

Stir VERY wel

Bake for 20 minutes at 200 degrees Celsius. I had to bake it for about 35 minutes - it may be due to us being at sea level here.
