sonnetjie Posted June 18, 2008 Report Share Posted June 18, 2008 In a bowl mix 1 finely chopped onion, 1 clove garlic finely sliced, ¼ t ground coriander seed, ¼ t ground cardimom, ½ t cinnamon, 1 t sea salt, 1/8 t ground black pepper. Add handful of fresh chopped thai basel leaves, ½ handful of fresh chopped flat leaf parsley, ¼ cup raisins, 1/8 cup craisins , 1 tablespoon limejuice, 1/8 t saffron threads dissolved in 1 tablespoon of hot water. Optional to add 1/8 cup pine nuts or almonds. Stuff the 1 chicken (1.5kg) with the stuffing. Sprinkle the chicken with ½ t ground aniseed, 1 ½ t ground cinnamon, 1 ½ t ground coriander seed, 1t ground cumin ½ t cardimom and 1 ½t cinnamon. Chicken1 cup melted butter1 cup stuffing (Pepperidge Farm is good.) 1 cup uncooked popcorn (ORVILLE REDENBACHER'S LOW FAT) Salt/pepper to taste Preheat oven to 350 degrees. Brush chicken well with melted butter, salt, and pepper. Fill cavity with stuffing and popcorn. Place in baking pan with the neck end toward the back of the oven. Listen for the popping sounds.
