Got the recipe from a friend is is very lush!

Lush Maltabella Chocolate cookies

Ingredients:

  • 1 cup porridge
  • 2/3 cup besan flour (chickpea flour)
  • 1/ 2 cup tapioca starch
  • 1 tsp baking soda
  • 1/3 cup unsweetened cocoa powder
  • 200 g dairy free dark chocolate
  • 2/3 cup grapeseed oil
  • 2 tbsp water
  • 1 tbsp instant coffee granules
  • 2 eggs
  • 2/3 cup white sugar that has been grinded in a Bamix or coffee grinder to form a powder
  • 2/3 cup packed brown sugar that has been grinded in a Bamix or coffee grinder to form a powder

Steps:

  1. Sieve all the dry ingredients together.
  2. In the microwave, melt the dairy free dark chocolate, grape seed oil, water and instant coffee granules. Make sure all the ingredients have melted. Set aside and allow it to cool.
  3. Using your Kenwood cake mixer mix the eggs and sugar until smooth.
  4. Add 3 to 1 and then add 2.
  5. Using two baking trays place "magic cooking sheets" (Teflon sheets, or grease the trays) on both baking trays. Place spoonfuls of the cookie mixture on the magic cooking sheet. The batter looks a bit oily, but after baking there is no trace of it. Bake 10- 12 minutes on 180 C. Note that the batter spreads, so make sure that there is enough room between each cookie on the baking sheet. Paul says that he prefers it when the cookies squeeze up against each other, as then they look very generous and yummy.

PS: only try and taste the batter after you have added the chocolate otherwise you will think that it tastes like poison. The chocolate hides the besan flour taste completely.
