jo1 Posted July 5, 2009 Report Share Posted July 5, 2009 Tried and tested recipeBobotie 25g butter1 large onion, chopped250g beef, minced250g pork, minced2 garlic cloves, crushed2cm fresh root ginger, peeled and grated2 tsp garam masala½ tsp turmeric1 tsp ground cumin1 tsp ground coriander2 gloves3 allspice berries1 tsp dried, mixed herbs50g dried apricots, chopped25g flaked almonds3 tbsp chutney (Mrs Balls of course)4 tbsp parsley, chopped4 bay leaves, plus extra to garnish250ml full cream milk3 large eggs50g sultanaMethod:Preheat your oven to 180˚C. Heat the butter in a saucepan and cook the onions until soft. Set them aside. Heat a large frying pan and fry the beef and pork without any oil, until golden brown. Remove from the heat and add the onions, together with all the other ingredients except the milk and eggs. Mix well and put into a largish ovenproof dish. Spread the mince out evenly, then press down firmly. Whisk the eggs and milk together and pour over the mince. Grill until the mixture sets and is nicely browned and cooked.
