Quick delicious salad

We had this salad at a family lunch last week it was a real winner

In a salad bowl add 1cup of fresh flat leaf parsley & 1 cup fresh mint, both roughly torn by hand. Cut up ¼ an Asian cabbage into thin slices, add about 4 -5 thinly sliced radishes. Add about 150g of crumbled Kebia sheep’s feta. Add 2 tablespoons of sweet chilli sauce. Defrost 1 cup of frozen peas, let them return to room temperature before you add them to the salad. Mix well.

Mix 1/3 cup olive oil (extra virgin is best) and 3 tablespoons of lemon juice. Mix well and pour over salad.

Thanks for the salad tip, sounds yummy and healthy. After this Easter weekend, I have overdone things, so salads sound soooo good!!
