TheBs
I make a "Scotch Pudding" which I think is the same thing?!?1 cup flour1 cup milk1 1/2 tsp baking powder1 cup apricot jam1 egg1 dessert spoon vinegar2 dessert spoons butterMix butter and flour well. Take half a cup of milk and add half a cup of jam and the egg. Mix these well and mix into the flour. Take the remaining half cup milk and half cup jam and mix with the bicarb and vinegar and then add to the other mixture. Pour into a greased baking dish.Make up the sauce of2 cups milk1 cup cream and1 cup sugar (I use brown sugar)Mix these together well and pour carefully over the batter.Bake at 180 until brown - about 30 - 40 minutes.I am making this tomorrow for Christmas day. It is lovely hot or cold.
