Eva Posted November 10, 2008 Report Share Posted November 10, 2008 Goody, are you getting into the Christmas spirit after all?Sad to hear you don't enjoy Christmas (was you wasn't it?)My absolute favourite!Eggnog12 eggs, separated2 1/4 cups castor sugar4 cups whiskey2 cups dark rum4 cups full cream milk4 cups cream, whippedFreshly grated nutmegBeat the egg yolks well; add sugar and continue beating until smooth and yellow-coloured. Slowly stir in the whiskey, rum and milk. Fold in the whipped cream. Whip the egg whites until stiff but not dry. Fold into the eggnog mixture. So I've decided to go all out. Decorate the tree, eat as much as possible and go caroling etc etc etc.If you don't hear from me after 25/12 you may assume that the effort has, in fact, killed me. I am sure that you will enjoy it.In terms of the signature dish i dont have one for the day. We always do the typical roast and veg and lots of pudding. I always cheat and buy a fruit cake from the lions ladies group (Pour brandy over it and it looks homemade!).But for me xmas is all about baking and i like to bake boxes of biscuits and rusks. I will pull out some of my recipes and post them. This year i am planning to bake home made biscuits for my sons teachers. And then for those who are still in JHB, i went to the Jozi food market this weekend. It runs every saturday in Parktown north and there was a guy selling bottles of spreadable nougat. I mean it is absolutely amazing and you can use it instead of icing on cupcakes! I was in heaven! Bought some (Comes in vanilla, chocolate and coffee). It is like nougat but without nuts and fruit in it. Ingredients 1 cup of water 1 tsp baking soda 1 cup of sugar 1 tsp salt 1 cup of brown sugar lemon juice 4 large eggs nuts 1 bottle Vodka 2 cups of dried fruit Vodka can be swapped for Gin or any other suitable spirit Sample the vodka to check quality. Take a large bowl, check the vodka again. To be sure it is the highest quality, pour one level cup and drink. Repeat. Turn on the electric mixer. Beat one cup of butter in a large fluffy bowl. Add one teaspoon of sugar. Beat again. At this point it's best to Make sure the vodka is shtill OK. Try another cup .... just in case Turn off the mixerer. Break 2 leggs and add to the bowl and chuck in the cup of dried fruit. Pick fruit off the floor. Mix on the turner. If the fried druit gets stuck in the beaterers pry it loose with a sdrewscriver Sample the vodka tocheck for tonsisticity. Next, sift two cups of salt. Or something. Who giveshz a sh*t. Check the vodka. Now shift the lemon juice and strain your nuts. Add one table. Add a spoon of sugar, or somefink. Whatever you can find. Greash the oven and piss in the fridge. Turn the cake tin 360 degrees and try not to fall over. Don't forget to beat off the turner. Finally, throw the bowl through the window, finish the vodka and kick the cat. Fall into bed. TheBs Posted December 4, 2008 Report Share Posted December 4, 2008 A real quick and easy pud which we do for Christmas and the kids love...Ingredients2 litres vanilla ice creamI packet good quality ginger biscuits4 flake chocolates100g cherriesLeave the ice cream to soften but not melt completely. Crush the ginger biscuits and flakes. Chop cherries into quarters.Mix all together well and then return to deep freeze. I too fall into your Grinch category. DH and kids (of course) are Christmas verskrik! But this year is our last Christmas in SA so I too am going to go all out. We are decorating our house and spending lots of rands on Christmas lights, etc. so that we have Christmas decorations to take to Aus because when we get there in the last quarter of next year we will most likely not have the funds to spend on decorations and I will be back in my Grinch box again... Hosting Christmas this year, for hors d'oeuvre we are doing:Pork-my-Cherries Maraschino cherriesPack bacon (rashers since they’re long and slim)ToothpicksWrap each cherry up in bacon and secure with a toothpick.
