New Recipe Teaser - Surfermans Ultimate Chicken, avocado, banana salad with Lime Dressing

Here is a wicked salad for the long hot summer days.

Ingredients

Breast or deboned thigh - depends on how many you need to feed. For my herd of five I use 10-12 thighs. Skin on please for flavour.

2 x avocados

2 x bananas

Salad greens

Walnuts - 100g

Sea Tangle Kelp Noodles - almost carb free.

2 x limes

Pecorino or Parmesan cheese

Method

Grill or pan fry the chicken till the skin is crispy, but the meat is juicy. (Yes you can eat chicken a bit pink, its delicious and no you won't die. Same with pork, no more dry powdery crap)

Set aside to cool.

Slice to taste.

Toss salad and coat lightly with a neutral oil, like grapeseed or avocado.

Slice avocado and banana into salad.

Add walnuts.

Add chicken.

Toss.

Shave cheese over the salad.

Serve on bed of kelp noodles.
